Fish en papillote

If you're at a loss as to how to cook your fish without losing a lot of moisture, try this method. Wash lightly pat dry the fish fillets with a paper towel. Lay it in the middle of a piece of parchment paper, and add washed and chopped vegetables (like asparagus, green beans, or diced squash). Drizzle with olive oil and/or a few bits of butter, salt and pepper, and bake at 400 for 25 minutes. Et voila!
